Ingredients

  • Cooking Oil - 1/4 cup
  • Fried Onions - 1/4 cup (If you don’t have pre-fried onions then you can take two medium-sized onions and just cut them into fine pieces and golden light brown in the above oil)
  • 2-3 medium size tomatoes.
  • Water 1/2 cup

Directions

  1. If you don’t have pre-fried onions then you can take two medium-sized onions and just cut them into fine pieces and golden light brown in the above oil
  2. In a blender or chopper, mix onions and tomatoes and blend into a fine puree
  3. Heat the oil on low heat and pour this mixture along with the water into it
  4. Cover the pot and let it simmer on this low flame stirring it occasionally
  5. Pretty soon the water will start evaporating, keep stirring occasionally
  6. At some point, the water will evaporate completely and the oil will start appearing on top of the red colored paste
  7. When the oil separates from the paste, your Masala or the base gravy is ready
  8. Now you can use it to cook other dishes

PRO TIP

You can make this base in bulk/bigger batch and then freeze it for easy access to save time next time you’re ready to cook. It can stay in the freezer for months and can be used pretty quickly without affecting the taste or quality of your next dish
