Ingredients
- 1 cup Rice of your choice
- 1 cup of water (or replace it with vegetable broth to add some flavor)
- 1 cup of frozen mixed vegetable
- 1 small red onion (cut into cubes) see image to get an idea
- Julian cut carrots 1/4 cup (optional)
- 1 teaspoon of cumin seeds (optional)
- 3 tablespoon of olive oil (or any other oil of your choice)
- Salt to taste
- Black pepper to taste
- 1/2 teaspoon of crushed pepper flakes (optional), if you like to spice it up
- Fresh cilantro and green onion finely chopped to garnish at the end (optional)
Directions
- Rinse the rice 3 or 4 times under cold running water and add it to the rice cooker pot
- Add 1 cup of water (or broth if you are using it) to this rice
- Add 3 tablespoons of Olive oil (or whichever one you are using)
- For additional taste, you can saute the vegetables (optional)
- Heat a pan with olive oil or butter and add cumin seeds (if using) and let them sizzle for a few seconds
- Add the mixed vegetables and cook for 2-3 minutes. Season lightly with salt and pepper
- Transfer the sauted vegetables into the rice cooker pot
- If you are not sauting the vegetables, simply add the vegetables directly to the rice cooker pot
- Add your spices/dry ingredients
- Start the rice cooker (generally speaking it should be set to “White Rice” or “Cook”
- Once done (approximately 15-20 minutes), take the pot out of the rice cooker carefully (don’t burn yourself) and fluff the rice with a fork
- Garnish with the finely chopped Cilantro if you are using it
