EGG FRIED RICE (Simple & Tasty)

Ingredients

  • 1 cup Rice of your choice
  • 1 cup of water (or replace it with vegetable broth to add some flavor)
  • 1 cup of frozen mixed vegetable
  • 1 small red onion (cut into cubes) see image to get an idea
  • Julian cut carrots 1/4 cup (optional)
  • 1 teaspoon of cumin seeds (optional)
  • 3 tablespoon of olive oil (or any other oil of your choice)
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon of crushed pepper flakes (optional), if you like to spice it up
  • Fresh cilantro and green onion finely chopped to garnish at the end (optional)

Directions

  1. Rinse the rice 3 or 4 times under cold running water and add it to the rice cooker pot
  2. Add 1 cup of water (or broth if you are using it) to this rice
  3. Add 3 tablespoons of Olive oil (or whichever one you are using)
  4. For additional taste, you can saute the vegetables (optional)
    1. Heat a pan with olive oil or butter and add cumin seeds (if using) and let them sizzle for a few seconds
    2. Add the mixed vegetables and cook for 2-3 minutes. Season lightly with salt and pepper
    3. Transfer the sauted vegetables into the rice cooker pot
  5. If you are not sauting the vegetables, simply add the vegetables directly to the rice cooker pot
  6. Add your spices/dry ingredients
  7. Start the rice cooker (generally speaking it should be set to “White Rice” or “Cook”
  8. Once done (approximately 15-20 minutes), take the pot out of the rice cooker carefully (don’t burn yourself) and fluff the rice with a fork
  9. Garnish with the finely chopped Cilantro if you are using it
