This recipe is a simple way to create a classic chicken and vegetable Chow Mein dish at home. The key is to have all your ingredients prepped before you start cooking, as the process moves very quickly.
Ingredients
- Chicken and Vegetables:
- 1 boneless chicken breast, thinly sliced
- 2 cups chow mein noodles (dry)
- 1 large carrot, julienned or thinly sliced
- 1 cup shredded cabbage
- 1 bell pepper, thinly sliced
- 1/2 onion, thinly sliced
- Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, but recommended for flavor)
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 1/4 cup water
- Oil: 2 tablespoons, for stir-frying
Directions
- Prepare the Noodles: Cook the chow mein noodles according to the package directions. Drain them and rinse with cold water to prevent them from sticking. Set aside.
- Prepare the Sauce: In a small bowl, whisk together all the sauce ingredients: soy sauce, oyster sauce, sesame oil, sugar, black pepper, cornstarch, and water. Set aside.
- Stir-Fry Chicken: Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry for 3-4 minutes until it is cooked through and lightly browned. Remove the chicken from the pan and set it aside.
- Stir-Fry Vegetables: Add the remaining 1 tablespoon of oil to the same pan. Add the onion, carrots, bell pepper, and cabbage. Stir-fry for 5-7 minutes, until the vegetables are tender-crisp.
- Combine and Finish: Return the cooked chicken to the pan with the vegetables. Stir the sauce mixture again and pour it into the pan. Stir continuously until the sauce has thickened and coated everything.
- Add Noodles: Add the cooked noodles to the wok. Use tongs to toss everything together until the noodles are well-combined with the chicken, vegetables, and sauce. Serve immediately.
